An easy, no bake, rainy kinda night..

So I'm sitting here as it's pouring down rain outside, waiting on my no bake Twix cheesecake to chill. Twix is Jason's favorite :) You see Jason and I moved to GA about 8 months ago for his job, and all the belongings that we have MUST fit in our scion xb. With that being said, Nearly all of our things are in storage at his Grandmas in PA or at my parents down in FL. That means 99.9% of my baking pans, dishes, etc are not here with me. We've been living like gypsys the last year and a half. I went out tonight to get a springform pan because I really wanted to make a really nice cheesecake, ya know? Put some blood, sweat, and tears into that thing! Well, low and behold no springform pans anywhere. I couldn't belive it. In my head all I heard was 'WHAT?! NO SPRINGFORM PANS!!! NOOOOOOO!' After the shock had worn off, I decided what the heck let's do a no bake and get my butt on home. It was looking nasty outside and I did not want to get caught in that, no sir, no way. Along I went, buying the no bake box, a bag of twix, and la la la I'm on my way .. Now, I had this old no bake Snicker cheesecake recipe and I figured swap out one candy bar for the other. Not really brain science ya know? So that's exactly what I did!!!

First I took 12 mini twix bars out of their wrappers, set out a plate and got to work.





Then all the little twix went wee wee wee all the way into my blender!





After pulsing a few times on the chop setting I poured it onto a plate, It looked like this -





I sat that aside, pulled out a bowl, and dumped the graham cracker crumbs along with 3 tablespoons of granulated sugar in a medium mixing bowl. Melted 1/3 cup of butter, and poured it right on in.





I grabbed a 9 inch pie plate, and with my fingers pressed the crumbs onto the bottom and up the sides a bit - Yes I have my hand tattooed. Yes, My knuckles say LIVE TO BAKE :)





I took about 1/4 cup of crushed twix and sprinkled that on top of the crust..





Sat that aside, and began to mix the filling with 1 1/2 cup of milk, and nearly all of the crushed twix.





After that I poured it into the pie plate, sprinkled some more twix on top. Did I mention Jason really LOVES twix?? Well, he does.

I'm sure it will taste good, you can't really go wrong with no bake anything, and twix added to that mmmmm mmmm!!!!


Twix No Bake Cheesecake

1 box no bake cheesecake mix
1/3 cup butter, melted
3 tablespoons sugar
12 mini twix, crushed
1 1/2 cups cold milk


In blender crush twix on chop setting. Reserve about 1/4 cup of twix for topping. Split remaining twix into equal parts.

Combine graham cracker crumbs, sugar, and melted butter. Using a fork combine all until moistened. Press onto bottom and sides of 9 inch pie plate.

Pour cheesecake mix into a bowl, add milk and beat on low until blended. On medium speed beat another 3 minutes. Add in one part of reserved twix, and stir with spoon to combine.

Pour onto crust and spread it evenly around. Top with remaining twix. Chill at least 1 hour.

I plan on making some butterscotch chip cookies here soon. So be on the look out for those! Now I'm off to make Jason's dinner. Beef and Waffles!!! Here's a picture of Jason tattooing the ovenmitt on my leg. He finally finished it, once it's healed I'll put up a picture!
