Chocolate Peanut Butter SNOWBALLS!!!

Yesterday was one of those weird days when it snows in Georgia. Yep, I said SNOWS in Georgia, ya'll! Jason and I really weren't expecting anything major. I walked outside about 11 am and it was basically frozen rain, nothing crazy. We left on our way up to Atlanta, which is about a 2 hour drive. We got 30 minutes away from Atlanta and then it was a different story. It started to snow pretty hard. I liked it, of course. The roads were a little crappy, only because the people on them. Jason being from PA where the snow is more natural, knows how to drive in it. The native GA resident?? Not so much.. On the way home, traffic was just precious...

We had an awesome time up in Atlanta visiting friends and Jason took me out to eat at The Vortex in Little 5 Points. It was the first time he's been there, and my second. Man do they know how to do it.They have the BEST burgers EVER. My honey said so himself, and he knows a think or two about burgers my friends. I love their potato salad, and it's just a really cool place to eat. So I highly recommend the next time you're in Atlanta you really should check it out!





Now all the snow is melted and gone, so sad! It was fun while it lasted. So, to mark our snowfall yesterday, today I made some no bake chocolate peanut butter 'snow ball' cookies. MMM! That snow sure went out on a good note, now didn't it? These are tasty little things.




Chocolate Peanut Butter Snowballs

6 chocolate graham crackers, finely crushed
1 cup peanut butter
2 tablespoons honey
1 tsp vanilla
pinch of kosher salt
Powdered Sugar for coating cookies, about 1/4 cup, use more if needed

Get a baking sheet lined with parchment paper ready, set aside. In mixing bowl,combine all ingredients - except powdered sugar. Mix well. Roll into balls with hands. Gently roll balls in powdered sugar. Place on prepared baking sheet. Chill at least one hour before serving.

Makes 12 snowballs

    I wonder if I could substitute agave nectar for the honey (annoying vegan here, you know - ha ha)... do you think that would work ok, sweetie?

  3. I think that would work wonderfully!! You could even go without it. I just always have liked the peanut butter honey flavor mixture.
