Busy busy busy!!!

I've been busy. REAL busy.. I've baked, not been able to blog about, which means that I won't have pictures of said baked goods, but they sure were enjoyed. Today is one of my days off and after much cleaning and laundry, I made some muffins. Not your average everyday muffins.. But this I call a 'donut' muffin. Why? Because I want to, that' why. And because the texture is that of a cake donut and it's really yummy. So there, in your face.

I like the way they turned out. Not too sweet, not too plain. Just perfect, to me anyways. Liz also happened to like them. She had three when she came to visit today and I gave her a baggie full to take home :D So taste tested, Liz approved!

Mini Spiced 'Donut' Muffins With Vanilla Butter cream


2 cups flour
3/4 cup sugar
2 ts baking powder
1 ts kosher salt
2 ts pumpkin pie spice ( I really love that stuff)
3/4 cup milk
2 eggs, lightly beaten
1 ts pure vanilla
1 ts unsalted butter, softened

Butter cream:

1 stick unsalted butter, softened
3 1/2 cups powdered sugar
1 ts vanilla
1/4 cup milk

Preheat oven to 325 degrees. Spray a mini muffin tin with cooking spray. Set aside.In large bowl mix flour, sugar, salt, baking powder, and spice. Stir in eggs, vanilla, milk, and butter. Beat together until well blended. Drop into muffin tins, about 1 spoonful in each cup. Bake for 15 minutes. Allow to cool completely on wire rack.

To make the frosting, simply blend all ingredients together until well blended and smooth.
