Say what?!

My love went to North Carolina on Sunday.. BOO!!! :( It's the first time we've been apart since we've been together. I cried like a big baby for hours after he left. Thank goodness he will be back Wednesday evening! I can't wait to see his handsome face and kiss it all over, oooh lala! And I'm super glad that he had a great time while up in NC. I wanted to bake him something special and surprise him when he got back, so I decided to bake him some chocolate cupcakes with a surprise filling! I found a recipe for some chocolate chip cookie dough cupcakes, Amazing right??!! This one was a brown sugar cupcake, with a filling that is made with store bought refrigerated cookie dough, and a regular butter cream frosting. Since I didn't want to make a brown sugar cupcake, nor did I want to use store bought cookie dough (nothing wrong with that, just didn't want to do it) and since Jason loves my cream cheese frosting, I really wanted to do a cream cheese frosting, but not the usual one I do.. So, I just kinda went with the flow of things, and came out with this! Let me tell you, the flow turned out perfect :D




Chocolate Surprise Cupcakes with Cream Cheese Cookie Dough Frosting
(Recipe inspired by HowToEatACupcake, Though I totally revamped it my way!)

Chocolate Cupcakes:

1 box chocolate fudge cake mix ( I used Betty Crocker)
4 large eggs
1 1/4 C buttermilk
1 stick unsalted butter, softened
1 TB pure vanilla

The filling is the same exact recipe I used for the cookie dough truffles I made a few weeks back!

Chocolate Chip Cookie Dough Filling:

1 1/4 C flour
1/2 TS salt
1/2 C butter, softened
1/2 C sugar
1/4 C light brown sugar
1/4 C milk
1 TS pure vanilla
1 C mini chocolate chips

Cream Cheese Cookie Dough Frosting :

1 stick unsalted butter, softened
1/2 C light brown sugar, packed
2 C powdered sugar, sifted
1/2 TS kosher salt
1 TS pure vanilla
1/2 C flour, sifted
2 TB milk
8 oz. cream cheese, softened

Preheat the oven to 325 degrees. Prepare 2 muffin tins by lining them with cupcake liners, or spraying with nonstick cooking spray. Mix all the ingredients to make the cake well, blend on medium speed for approx. 3 minutes until mixture is smooth and lump free. Fill each liner 2/3 full. Bake for 32 minutes or until toothpick inserted in center of cupcake comes out clean. Cool on wire rack completely.

Meanwhile, prepare the filling as follows.
Cream the butter, sugars, and vanilla together until light and fluffy. Add flour and salt, mix until just combined. Add milk until blended well. Fold in chocolate chips.
Once the dough is made, let chill for one hour.Go ahead and cut a hole in the middle of the cupcakes. This is where your filling is going to go.

To prepare your frosting - Cream the butter, cream cheese, and brown sugar together until light and fluffy. Add in flour, salt, and powdered sugar, mix until well combined and smooth. The mixture will become some what stiff, this is when you add the milk. Add more or less depending on your preference.Add vanilla and beat on medium speed until frosting is light and fluffy. Take the cookie dough out of the refrigerator. It should be firm enough to handle. Fill each hole in the cupcake with the chilled cookie dough.





Frost as desired and ENJOY!


I can't wait until Jason gets home and has one (or two, hehe) of these bad mamajamas! He is the greatest, and deserves a little sweet treat for working so darn hard and being my partner in crime!

I like the way you can't tell where the frosting ends and the filling starts, mmmmm PERFECT!

    Plus, I bet Jason was the MOST happy, because he got to eat them!!! (he he)
