Lots of Packing & Biscuits

Finally back in Georgia and getting down to business! We will be leaving Monday, so I have been packing like crazy. Just trying to get everything we want to take together and make sure it fits in the car. I got all the DVDs and books packed, and with everything else thrown around the room I needed a break. I don't have much here at the house since we've been gone so much. I had some Bisquick, mini chocolate chips, and pumpkin pie spice. So folks, here you have Pumpkin Spiced Biscuits with and without chocolate chips. They both are tasty, and to add a little sweetness to the ones without chocolate chips, I added an itty bitty amount of butter and sprinkled some granulated sugar over them. Definitely a good choice.




Pumpkin Spiced Biscuits

3 cups heart healthy Bisquick
3 TB pumpkin pie spice
1 C water
1/2 C semi sweet chocolate chips

Preheat oven to 450 degrees, set aside an ungreased baking sheet. Sift together Bisquick and pumpkin pie spice. Gently mix in the water until a soft dough forms. On a lightly floured surface, knead the dough about 2 minutes. Divide the dough in half.



Making sure the surface is still floured, Roll out flat,to about 1/4 inch thickness. Using a biscuit cutter, or a glass with the rim floured, cut out rounds, you should get anywhere between 11-14. With the remaining dough gently fold in the chocolate chips. You can drop by spoonfuls onto ungreased cookie sheet, or roll out, whatever you prefer. I made dough balls with my hand, flattened them out, and then turned them into odd shapes. It gave me something to do, haha. Bake 7-9 minutes, or until light golden brown. Cool on baking sheet 5 minutes before cooling completely on a wire rack.




I ate mine with some fresh fruit. A nice big ol' cup of strawberries, blueberries, raspberries, and blackberries, mmmmm so yummy!

  1. Sounds wonderful! Good luck packing everything up. I never minded packing as much as the moving of all the boxes. We claim every time we are going to move that we will pay someone to move our boxes and we never do haha.
