This is BANANAS!!

MMMM bananas, How I love you.. Let me count the ways.. 1 - You are tasty, 2-I can eat you for breakfast. 3 -You are tasty, AND I can eat you as dessert too! My friends, let me introduce you to Mr. Banana Cream Pie with a pretzel crust...

Yep, I said it.

P-R-E-T-Z-E-L CRUST!!! I was looking for this recipe Jason was talking about from his child hood. A strawberry pie with a pretzel crust, I've heard of it before, but never have had it. What I found was this little fella just looking at me with it's big ol' banana filled eyes. So I had to, I just HAD to make it. Jason surely understood. He took one bite and said 'OOOHHH', and I do believe that was a good sound. I got the strawberry recipe from his Mom, so I'll be making that soon as well.

Banana Cream Pie with a Pretzel Crust

Crust:
3/4 C crushed preztels
3/4 C flour
5 tb melted butter

Filling:
8 oz cream cheese, softened
3 C whipped cream -2 C heavy whipping cream + 1 TB pure vanilla beaten until stiff peaks form - I may have used a little bit more ;)
1 small container banana instant pudding
3 1/2 C milk
3 large bananas, thinly sliced
1 TB lemon juice to toss bananas in


Preheat oven to 400 degrees. Mix together the flour, crushed pretzels, and melted butter using a fork. I didn't roll it out, like the original recipe suggests, I was in a hurry so I just poured it into the pie plate and using my sweet little hands pressed and formed it into the pie plate. Bake for 10-15 minutes, let crust cool COMPLETELY.

For the filling, make the pudding as directed using the 3 1/2 C of milk, chill 5 minutes. Beat in the cream cheese and 1 cup of the whipped cream. Stir in the sliced bananas tossed in lemon juice. Mix well and spread over the cooled crust. Top with remaining whipped cream and garnish as desired - I didn't garnish it at all because I ended up piling the whipped cream high.. It looked delicious as it was! Chill for 2 hours, and then watch as your guest devour that sucker!
