And I'm back.. Kind of!

Well, the last month has been crazy. Still trying to get back into the swing of things. I was finally able to get in on the baking action. But nothing too crazy. Just some yummy little Cinnamon Cream Pumpkin Pies! Jason loves pumpkin, I love pumpkin, Doesn't everyone love Pumpkin? It's too good to hate, so shut your mouths if you don't like it and make it anyways!



I took Deezy to the groomers, Jason was at work, the house was clean, and I wanted to do something. Luckily I had everything at the house to make these bad boys. I was thinking of making just a big ol' pumpkin pie, but I do like the idea of minis. That way it's easier for me to give them away, haha. The only bad part of yesterday was not having a rolling pin. Lost that in the fire, along with my biscuit cutters, so I just did what any smart woman would, and used my glass as both. It turned out well!




I also didn't have any flour, so I used powdered sugar in place of it to dust my rolling surface, as well as the rim of the glass. It did nothing but add to the flavor of the pies!


Cinnamon Cream Pumpkin Pies

2 Ready made Pie Crusts

Filling
1 can 15 oz. Pure Pumpkin
7 oz (half can) of sweetened condensed milk
3 eggs
1 TS vanilla
2 TB cinnamon
Pinch of salt

Frosting
8 oz cream cheese, room temp
1 1/2 C powdered sugar, sifted
1 TB vanilla
2 TS cinnamon


Preheat your oven to 375 degrees. Spray two muffin pans with cooking spray, set aside. Roll out your thawed dough on a slightly floured (in my case powdered sugared) surface. Use a biscuit/cookie cutter and cut out rounds, I got 20, you may get more you may get less. Press into bottom and up sides of tins. Combing all the filling ingredients into a bowl and whisk together until well combined. Pour into dough cups, filling all the way. Bake at 375 for 25-30 minutes. Let cool completely, this way it will be easier for you to remove the pies out of the tins. To make the frosting, combing all ingredients, beat on medium high speed until light and fluffy. Decorate pies as desired, I wanted a rustic look, so I just spooned mine on. Loved it :)

    And so does pumpkin!!

    Everything you make is amazing. So happy that things are getting back to "normal" somewhat - you guys deserve a vacation after everything you have been through!!

  2. oh man i love pumkin, any one who doesn't is obviously not a realy american. haha. looks great! with this fall weather rolling in im so excited for all the food :D
