Chicken Alfredo and Garlic Bread!

You know those nights when want something easy for dinner BUT you want to stay in? No going out, just a nice evening at home hanging with your honey and your dog? That's my kinda night. And this is my kinda meal. Super easy, super yummy, and gives you lots of free time that night to cuddle up in bed :)



I honestly couldn't tell you why I've only JUST started making my own alfredo sauce. Why in the heck did I ever think it was so much easier to just buy that jar stuff? Don't get me wrong it's good and all. But do you know how much better I feel about making it myself? Knowing what's going in it? I guess you could say I like to be in control. This sauce has so few ingredients, but packs such an amazing flavor. It's very easy for you to adapt to your liking. What I like about it, is that there is NO cream cheese in it. I did not want a sauce like that and after finding basically A TRILLION. I decided just to go the basics - flour, garlic, milk, butter, cheese - YUMMY!

You know what else is super easy and will leave ya standing there wondering 'Why the heck haven't I done this myself before'? MAKING YOUR OWN GARLIC BREAD! WOOO HOOO. Yes, so easy and after tasting my very own home made garlic bread I will not EVER EVER NOT make it my own ;) It was that good. Jason says he could have ate just that for dinner and been happy. Oh that man of mine, I tell ya. He sure is a keeper.

Chicken Alfredo

1 stick butter
1 C flour
3 1/4 C skim milk
1 3/4 C shredded parmesan cheese
cracked pepper/salt to taste
3 chicken breasts, skinless, diced and cooked
1 box pasta of choice I used Penne Pasta

In a large pot melt the butter. Stir in flour to make a paste. Cook until browned, about 10-15 minutes. Add the milk and bring to a boil. Reduce heat to low, sauce should start to thicken. Stir in cheese and season to taste. Cook chicken as desired, stir into sauce. Cover and keep on low heat until pasta is ready. Once pasta is done, drain, and stir into sauce.

Garlic Bread
1 loaf french bread
1 stick unsalted butter, soft
1 TS parsley chopped
1 TS chopped garlic
1 TS garlic powder
1 TS parmesan cheese

Preheat oven to 400 degrees. Mix all ingredients together, spread on bread, and bake until cheese is melted and golden brown. About 10 minutes.

  1. That looks sooo delicious! (And Thank You for coming up with a recipe that doesn't use cream cheese). Oh my, it's after 1:00 am on the west coast and you just made me hungry! :)
