Peppermint Brownies

Ah, tis the season isn't it? Cookies, cakes, all sorts of tasty treats everywhere. It's fantastic :) Tomorrow we have a pot luck at work, we were all asked if we wanted to make anything. My response? DUH! Ladies and gents, I introduce you to peppermint brownies!



Peppermint + Chocolate + Cream cheese. What's not to like? Seriously folks. I'm sure you all have the ingredients to make these in your kitchen right now. And if you don't - GO GET THEM! These babies are super good and super easy. Which is important because this time of year is extremely busy for us all.


Peppermint Brownies

1 box brownie mix, baked via directions on box, but please bake in a 9x13 pan! I used Betty Crocker boxed fudge brownies

Topping
1/3 cup milk - I used skim
1/4 cup butter
1 (12 ounce) bag semi-sweet chocolate chips
1 teaspoon vanilla extract
1 cup powdered sugar


Prepare brownies as directed on box, cool COMPLETELY. In a large bowl cream together the butter and c.c, Add in one cup of the powdered sugar, and beat until creamy. Continue to add the other cup, and repeat if you feel you need more sugar. After you are done adding as much powdered sugar as you need/want, then stir in the teaspoon of peppermint extract. Set in refrigerator to firm up. About 30-45 minutes. To make the chocolate topping bring milk and butter almost to a boil over medium heat. Pour chocolate chips into a heat-safe bowl. Pour milk mixture over the top and let sit for 5 minutes. Add vanilla and whisk until smooth. Use an electric mixer to beat in powdered sugar until frosting is smooth. Spread chocolate frosting over the filling on the brownies. You can now put on sprinkles, jimmies, some kind of decoration if desired. Place back in refrigerator for one hour to firm up topping. Cut into small squares and enjoy :)
