Swedish Apple Pie Minis

What the heck is Swedish apple pie? Good question! It's basically a crustless apple pie, baked in a sweet mixture, and enjoyed by many. My little babies have a crust, mostly because I live on the dangerous side and wanted to see how they would turn out. I love them.



Swedish Apple Pie Minis

Pastry recipe for a 9 inch crust, your own recipe or go buy the rolled crust.

3 C granny smith apples, peeled and chopped
1 TB brown sugar
1 TB sugar
1 C flour
3/4 C sugar
1 TB ground cinnamon
1 TS pure vanilla
1/2 C melted butter
1 egg

Preheat oven to 350 degrees. Roll your prepared crust and using the rim of a glass, cut out 12 circles. Spray a muffin pan with cooking spray and press pie crust onto bottom and up sides of cups. They don't have to look perfect, I like mine 'rustic'.



Coat the apples with 1 tb sugar and 1 tb brown sugar. Spoon apples into each cup. Mix the remaining ingredients and pour over apples. Bake for 25 minutes or until top is golden brown.



You can serve them warm with some vanilla ice cream or how I like it - with tart frozen yogurt. Serve them cold, serve them anyway you like it! I hope you enjoy!
