Tie Dye Cupcakes

I must tell you now. These are the BEST VANILLA CUPCAKES EVER!!! Seriously, they are! I have tried many, tasted many, all alright. But this one, really is the best and I urge you all to get in the kitchen this very second and bake them. You better!!

I found the cupcake recipe from here and tweaked it a little bit. Used less sugar, more vanilla, and like I said it is the BEST!

Tie Dye Cupcakes

2 1/2 C flour
1 TS baking soda
1 TS baking powder
1 TS salt
1 1/2 C sugar
3 eggs
1 C canola oil
2 TB pure vanilla
1 C sour cream
food color

Makes 22 cupcakes

Preheat oven to 350 degrees. Line two muffin pans with liners and set aside. In a medium bowl whisk together the first FOUR ingredients. In a large bowl beat together the eggs and sugar until combined. Add in the eggs and vanilla, mix well and then beat in the sour cream. Add in the flour mixture slowly, and beat until well combined, scrapping the sides of the bowl as necessary.



Divide the batter into four different bowls. Color each bowl as desired. Layer into individual liners, once finished, use a toothpick and swirl the batter together.



Bake at 350 degrees for 20-25 min or until toothpick inserted in center of cakes comes out clean. Let cool in pan 10 minutes, them cool COMPLETELY on wire rack.



I made a cream cheese frosting and a buttercream frosting. You can use whatever your favorite white frosting is, or you can use my favorite!

For the vanilla buttercream:

1 C (2 sticks) unsalted butter, soft
1 TB pure vanilla
3 C sifted powdered sugar
2 TB milk

Beat the butter until light and fluffy, add in the powdered sugar, one cup at a time until smooth - it will be stuff, mix in the vanilla and milk, and beat until smooth AND creamy.. mmm

Divide frosting into four bowls, and just like the batter, color as desired.



Maybe you'll get some kind of sea creature in yours too ;)



In a pastry bag fitted with a large tip, layer the frostings, repeating twice. Decorate cupcakes as desired. It will take a minute for it to start swirling, so don't freak out (like I did), it will come out looking great, I promise!



These cupcakes are so fun, I can't wait to give some to my friend for her little girl. She loves tie dye, so I hope she loves these too! They were pretty fun to make as well. Cute baked goods are always a plus, cute AND tasty is even better.
