Strawberries and Cream Muffins

Don't you just love those days that you get up at 3 am for work, come home exhausted, and feel like baking? Oh I sure do! I am not really sure what was into me that day, but I just felt like burning the midnight oil, or in this case the mid afternoon oil. Nothing like getting ready for bed at 4 in the afternoon, is there? Okay.. There is. Take these muffins for instance. They are SO much better than that.



They had a sale at the local grocery store, I got 2 pounds of strawberries for 3 dollars. I thought that was amazing, so I had to come up with something super tasty and use them up. These muffins are so good, I love the taste of the baked strawberries. They may not be the very best looking, but looks can be deceiving, that's for sure. I've tasted many wonderful looking things that ended up tasting like doo doo. I'm glad that these do not taste like doo doo ;)

Strawberry and Cream Muffins

1/2 C sugar
1/2 C canola oil
1 egg
1 TB pure vanilla
2 C flour
pinch of salt
1 TS baking soda
1 C chopped strawberries
1 8 oz package cream cheese, softened
1 1/2 C powdered sugar

Preheat the oven to 350 degrees. Line a muffin pan with liners or grease/spray and set aside. Mix sugar, oil, and egg in a large bowl until pale yellow and creamy. Add in vanilla. In another bowl mix together flour, salt, and baking soda. Add to egg mixture in increments of THREE. Starting and ending with flour mixture. Stir until smooth, DO NOT OVER MIX. Fold in strawberries. Make your cream mixture by beating together the cream cheese and powdered sugar. Layer the muffin batter and cream batter in the muffin tin.

Bake at 350 for 25-30 minutes or until toothpick inserted in middle of muffins comes out clean.
