Jack & Coke Cupcakes

An ode to the classic drink, what else is there to say? I had the honor of supplying some goodies for the Incognito Tattoo BBQ bash and thought this cupcake would be a huge hit. Of course I was right! This is one of the 10 desserts I made for the big day. They were gone almost instantly!



I'm going to tell you a little secret, I really don't care too much for whiskey, bourbon, any of the hard stuff. I'm a girl, I like girly drinks. I'm sorry, I can't help it. For some strange reason I don't mind it at all when it comes to baked goods, crazy right? I like Maker's Mark in my pecan pie, and Jack Daniels in my cupcakes. Some people gave me a weird look when I tell them that, but hey ya'll don't knock it till you try it! I didn't get around to taking sweet in action shots like I always do, oops!

Chocolate Cola Cake


2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1/4 teaspoon salt
1 cup butter
1 cup Coca-Cola
1/2 cup whole buttermilk
1/4 cup dark coco powder
2 large eggs
1 teaspoon vanilla extract

Jack Daniels Frosting

1 1/2 sticks unsalted butter, room temperate
1 TS pure vanilla
4 C powdered sugar, sifted
1/4 C Jack Daniels

Preheat oven to 350 degrees, line muffin tin with paper cups, and set aside. In a large bowl, combine flour, sugar, baking soda, and salt. In a medium saucepan, combine butter, Coca-Cola, buttermilk, and cocoa. Bring to a boil over medium-high heat, whisking constantly. Remove from heat, and add to flour mixture, whisking until smooth. Cool for 10 minutes. Add eggs and vanilla, whisking until smooth. Spoon batter into prepared pan. Bake for 25 minutes or until a toothpick inserted in center comes out clean. Make frosting by beating butter until light and fluffy, add powdered sugar one cup at a time until desired consistency/sweetness. Beat in vanilla and Jack Daniels, you can add more or less powdered sugar/alcohol depending on taste preference. Enjoy!
