Vegan No Bake Cookies

Brace yourself folks, I haven't ever made no bake cookies. Weird right? I'm not too sure why I never did, and I am really mad at myself for not doing so. We had some friends over last night, after a long day of cleaning and running errands these were the perfect sweet treat to make. They were extremely easy and so dang tasty!



I was browsing the wonderful world wide web, and found myself on Laurens Latest. I saw her recipe for no bake cookies, and instantly wanted to make them. With what I had on hand, they were Veganized, but didn't matter. They still tasted amazing.



No Bake Cookies adapted from HERE!

1/2 C vegan butter (as picture above organic smart balance is Vegan!)
1/2 C non dairy milk (I used vanilla soy)
1 1/2 C raw sugar
3 1/2 C instant oats
1/2 C cocoa powder
1/2 C creamy peanut butter
1 TS pure vanilla extract

In a large bowl combine oats and cocoa powder. Plop the peanut butter on top, that's what I did! In a saucepan combine butter, sugar, vanilla, and milk. Whisk to combine. Stirring constantly until butter is melted and the first bubbles start to appear. Pour immediately into bowl and using a rubber spatula mix everything until combined.



Drop by spoonfuls onto baking sheet lined with parchment paper or foil. Chill until set.
