Potato Chip Truffles

Oh, you know me. Always with the crazy sweet treats. Bacon and chocolate, bacon cheesecake, bacon fudge, and now potato chip truffles. What can I say? We like to get a little crazy in the kitchen. Jason asked me to make something similar to the chocolate covered potato chips in the Late Night Snack ice cream by Ben & Jerry's. I always love a good challenge. So, this is what I came up with. They are also Vegan!



Potato Chip Truffles

1 12 oz bag semi sweet chocolate chips ( I use Ghirardelli)
2 C Plain potato chip crumbs
6 TB vegan butter
2 C organic powdered sugar
1/2 TS pure vanilla extract

Cream the butter, add in the powdered sugar one cup at a time, then mix in the vanilla until light and fluffy.



Toss in the potato chip crumbs.



Using a spatula, fold the crumbs into the creamed mixture until thoroughly combined.



Place the mixture in the freezer to chill for about 20 minutes. Take it out, roll into balls, and place on parchment lined baking sheet. Place baking sheet in freezer again and chill for 45 minutes.



Right before you take the baking sheet out of the freezer, melt the chocolate however you prefer. Dip them into the chocolate, tap off excess chocolate, and place back on sheet. Set in refrigerator to chill until firm.
