Madness!

Today I have been doing laundry, cleaning the house, and trying to catch up on some things that I haven't been able to do. Butch and Jade left this morning and Bryan got in last night. We all went to Applebee's for dinner and it was a good time! Really can't wait until Butch and his lady come back. Good people, for sure! Here are the recipes I promised from a few days back. Enjoy!!!



Boston Cream Donut Bites

Donuts:

1 envelope instant yeast
1/4 C white sugar
pinch of salt
3 3/4 C flour
1 C buttermilk or 15 TB milk + 1 TB white vinegar
2 large eggs
5 TB unsalted butter, softened

Cream:
1/3 C white sugar
2 TB cornstarch
pinch of salt
1 1/2 C milk
2 egg yolks, lightly beaten
2 TS pure vanilla

Topping:
1/2 C semi sweet chocolate, melted

For the donuts, whisk all dry ingredients together, set aside. Mix all wet ingredients together in the bowl of a stand mixer. Mix in dry ingredients on low speed until combined. Add in softened butter, mix until dough is tacky, it should be forming/formed a ball. Move to bowl sprayed with cooking spray, cover with plastic wrap, and let dough set and rise for about an hour and a half. Preheat oven to 375. Roll out dough to 3/4 inch think on a lightly floured surface, cut out 1 inch rounds, transfer to baking sheet. Bake 10-12 minutes until light golden. Remove and cool on wire rack completely. To make the cream, mix sugar, cornstarch, and salt in a saucepan, stir in milk gradually cook over medium heat stirring constantly until mixture thickens and boils. Boil and stir for one minute. Beat the egg yolks in another heat proof bowl, quickly beat in half of the hot mixture. Once incorporated into the egg yolks, pour egg mixture into rest of liquid in saucepan. Bring back to boil and stir for 1 minute. Remove from heat and stir in vanilla. Cool to room temp.



The donuts should have flat bottoms, if they do not slice them in half. Spread some of the cream onto one half of donut, and place another on top. Repeat until all donuts are used and cream is gone. Melt chocolate in microwave safe bowl for 1 minute, Stir until chocolate is melted, put back in microwave if needed. Drizzle over donut bites and DIG IN!
