Banana Caramel Cupcakes



This past Friday was pay day, Wooo hooo! Aside from that, we had 3 different people bring in a total of SIX dozen donuts. That's a lot of fricking donuts. I had the pleasure of trying a donut that looked like a basic cake donut with some caramel drizzle. Turns out it was a banana cake donut. Krispy Kreme knows what's up, and I thank them for the inspiration for this cupcake.



I have made banana bread muffins, Elvis inspired cupcakes ,and a vast array of cupcakes, But I never had made banana cupcakes from scratch. This is where google comes in, I looked and looked. Everything was good, but after reading reviews I was left with a sour taste in my mouth, no pun intended here folks. So I took a very basic cupcake recipe, added what I thought was the correct amount of things, and crossed my fingers. Food.com has tons of recipes to go through. That is where I found my starter recipe.

Banana Caramel Cupcakes makes 12 cupcakes

1 1/2 C flour
1/2 C sugar
1 TS baking powder
1/2 TS baking soda
Pinch of salt
1 stick UNSALTED butter, melted
2 eggs
4 ripe bananas, mashed. About 1 1/2 C
1/2 C sour cream
1 TS pure vanilla

Preheat oven to 350 degrees. Line a muffin pan with liners and set aside. In a large bowl whisk together all the dry ingredients.



Mix in mashed bananas, the butter, and eggs. Mix well, trying to not over mix. Quickly whisk in sour cream, and vanilla.
Divide batter into muffin cups. Bake at 350 degrees for 30-35 minutes OR until a toothpick inserted in center of cupcake comes out clean. Cool in pan for 10 minutes, remove, and cool completely before frosting.

Cream Cheese Frosting II

1 8 ounce package of cream cheese, softened
2 C powdered sugar
1 TS pure vanilla

Mix all together in bowl until smooth and creamy, frost as desired!



Caramel Drizzle

1 C light brown sugar, packed
4 TB unsalted butter
Pinch of salt
1/2 C half and half
1 TS vanilla

Put everything into a sauce pan and cook on medium low heat for 7-10 minutes. It will thicken as it cools. Pour into glass jar, and enjoy!



For these cupcakes, I cooled mine and then poured it into a squeeze bottle. Worked wonderfully :)





These delicious things are so moist. I was actually so happy that they were so moist I called my husband and tooted my own horn.



Yep.. It's the little things that make me happy :)
