St. Patrick's Day Goodies & a Frosting Recipe!

Normally I do nothing for St. Patrick's Day except for maybe a green shirt or some other clothing item. This year was a tiny bit different, I made cupcakes for my wonderful coworkers! Huge shocker right? I also made 3 dozen for a client, and I am happy to say they all turned out pretty good. The ones I made for the shop were chocolate espresso cake with a Bailey's irish cream frosting. They were really great and some of the guys were a little mad that I didn't make more. Oops!

Bailey's Irish Cream Frosting

1 stick unsalted butter, soft
1 8 oz package cream cheese, soft
1 TB pure vanilla extract
3-4 C of powdered sugar (adjust to taste, thickness preference, etc)
Smalest bottle of Bailey's Irish Cream you can get (I used what I guess you would call the travel size? lol. I don't drink normally)

Cream the butter and cream cheese together. Add the powdered sugar, one cup at a time until desired thickness and sweetness. Beat in vanilla and Bailey's until creamy, if you would like the frosting to be thicket, add more powdered sugar. Frost your cake as desired!
