Vegan S'mores Pie

What's better than moving into a new home that you absolutely adore? House warming gifts, that's what! I know that probably sounds horrible, but hey it's true and you know it! Mary and the wonderful folks over at Chicago Vegan Foods sent me the most wonderful care package ever. What happened to be inside? Only my most favorite (and the BEST) marshmallows ever, hands down. These even top the non Vegan marshmallows I've had. It is summer after all, so I decided to make this smores pie. It turned out amazing. Go grab some Dandies, and treat yourself to this tasty (easy, no bake, super awesome) pie!



S'mores Pie


1 10 oz bag semi sweet chocolate chips (I use enjoy life brand)
1 TB pure vanilla extract
Pinch of salt
1 1/2 container of toffuti better than cream cheese
1 bag of Dandies marshmallows

for the crust:

1 sleeve of graham crackers (10 crackers, pulsed to crumbs in food processor or blender)
3 TB earth balance, melted

This pie is really so easy, all you need to do is heat the oven to toast the marshmallows, but other than that it is no bake. And while those are toasting you can prepare the pie.  For the crust, mix the two together and press into a pie dish. I do this and then let it set in the fridge to chill while I prepare the filling. For the filling just melt the chocolate in the microwave (about 2 minutes, they vary so keep an eye on it) Toss everything into the food processor and blend well. You can taste to see if it's sweet enough for you, I like it how it is, but you may want to add some sweetener. Add a tablespoon of maple syrup or agave until you reach your desired sweetness. Pour filling into crust, and top with toasted marshmallows. I toast mine for about 10 minutes, but it may take shorter/longer for you. Again, just keep an eye out. It's best if you chill overnight, but go ahead and dig in if you want to. You know you want to..
